The sun at U+2600 is inherited from older symbol sets, not from the emoji block, so by default it is a black-and-white text glyph. It needs the variation selector U+FE0F to render in colour, which is why it is written ☀️ rather than ☀.

Strip that invisible character - as happens when text passes through some systems - and the sun turns into a monochrome outline. This catches people out in channel names and nicknames more than in messages.

The other suns

Sun with Face, Sun Behind Cloud and several weather composites exist separately and are true emoji-block characters with no variation-selector issue.

For anything that must render reliably as colour, those are safer than the plain sun.

In server configuration

It prefixes weather, summer and positivity channels, and pairs with the moon in servers that split channels by time of day.

Of the common weather emoji this is the one most likely to lose its colour, because it is an old symbol character rather than an emoji-block one.

If reliability matters more than the exact design, Sun with Face is a true emoji character and cannot degrade to monochrome.

A printing symbol

U+2600 comes from the same decorative and cartographic symbol blocks as the snowflake and the cloud, encoded for maps and printed matter decades before emoji.

Its default text presentation is a direct consequence: characters from those blocks were never meant to be colourful, and emoji presentation had to be bolted on with a variation selector.

Sun with Face, by contrast, came from the carrier sets as a true emoji and has no such issue - which is why it is the more reliable choice despite being the odder image.
